The most beautiful hour in Niechorze is the one between 7:30 and 8:30 PM. The sun drops over the Baltic, the light turns from white to honey, the 1866 lighthouse with its 1907 roof tiles starts blinking in the first shadows. This is the moment we wrote our cocktail menu for.

The first Aperol Spritz you drink between 5 and 6 PM — to open the appetite before pizza. The second cocktail — already after dinner — is usually a Whiskey Sour, Negroni or Mojito. The third, if you decide to stay, is something tropical: Mai Tai, Pina Colada, signature sours. In July and August the bar runs until midnight — the kitchen closes at 10 PM, but the shaker keeps going for two more hours.

How we make cocktails.

No tricks. Real spirits — Belvedere, Tanqueray No.10, Hendricks, Jack Daniel's, Havana 7yo, Jameson. Fresh fruit from the local market, mint from the pot next to the bar.

Our own syrups: sugar, honey, lavender, elderflower. We cook them once every 3 days, store them in sealed jars by the fridge. Everything fresh, nothing from ready bases.

Citrus juice we squeeze 2× a day — in the morning and before evening service. Juice straight from the fruit has a completely different taste than the bottled kind, especially important for sours — the acidity gives an energy you can feel on your tongue.

Three types of ice: finely crushed (Mojito, Frozen Daiquiri), classic cubes (Spritz, G&T), single diamond (Negroni, Old Fashioned). Each from a separate machine — because dilution and clarity matter for every cocktail.

Service time — 3 to 5 minutes at the bar. A Spritz comes out in 90 seconds (we stir, we don't shake), a Sour needs 30 seconds of energetic shaking, a Pina Colada goes into the blender. Every drink gets its proper glass: balloon, coupe, highball, tumbler.

July — August

Bar runs until midnight.

At peak season — from the first weekend of July to the last weekend of August — the kitchen closes at 10 PM, but the bar stays open until midnight.

Evening dishes disappear from the menu, but you can still order cocktails, wine, beer, focaccia and light snacks. This is the moment the garden gets darker, the neon lights start glowing brighter, and the background music takes on a more pronounced rhythm. The parasol tables are the hour of third drinks — for those who aren't planning to head back to the apartment at 11 PM.

10 PM — kitchen closed · 10 PM — Midnight bar open (July—August).
